Over the past few months, I've been really active in the kitchen. I now love trying new recipes and recently, I came across a fun recipe that made my tastebuds extremely happy.
For anyone wondering, I tried a butternut squash version of macaroni & cheese. Growing up I had never been a fan of macaroni unless it was baked (like we do it in The Bahamas). BUT I love squash and I love pasta!
Since I've been gluten-free for some years now, I decided to attempt the combination/ inventive version of macaroni & cheese, and to be honest I was pleasantly surprised.
So, if you're looking to add some range to your pasta dishes I highly recommend you try the recipe below!
P.S. ---You don't have to be gluten-free to make this dish- just substitute the gluten-free pasta for regular macaroni noodles!
Cook Time: 40 mins | Serving: 2 Pax
Ingredients
1 Butternut Squash- peeled & diced
1/2 clove Garlic -minced
1/4 Onion
Olive Oil
1 tsp Butter
Salt
Pasta Water
Gluten-free or Regular elbow/ penne noodles
Parmesean
Instructions
Preheat oven to 400
Sautee onions and garlic
Dice and season squash to personal taste, add onions, and garlic to the pan
Toss seasoned squash, onions, garlic in pan and coat with olive oil
Bake until soft then remove from oven to cool
Cook pasta with salt in water. Once pasta is finished, reserve a cup of the pasta water before draining
In a blender combine squash, pasta water, and butter and blend until you reach your desired sauce consistency. Season with a pinch of salt & pepper when finished blending
Combine noodles with sauce, add parmesan cheese and serve
*Amount of ingredients used vary based on the number of persons being served
