Try These 3 Gluten-Free Recipes in 2021



The house has been filled with the aroma of baked goods because well, nothing says "I'm home" like cooking something in the oven. Quite frankly, it simply feels good to know you can chef it up with ease.


Needless to say, more and more baking will be going on in 2021.


So here are a few gluten-free recipes we thought we'd share that are just...Très Bien!


This one is a morning treat...


1) Blue Berry Almond Breakfast Cookies - Recipe from Clean Eating Mag


1 banana mashed

1 large egg

2tbsp ground flaxseed

1/4 tsp ground cinnamon

pinch of sea salt

1/4 blueberries

2 tbsp slivered almonds


Cooking Directions

Preheat oven to 350 F.

Whisk banana, egg, flaxseed, almond flour, vanilla, cinnamon, and salt

Fold in blueberries

Spoon mixture on to baking sheet lined with parchment paper

Sprinkle with almonds

Bake for 13- 15 mins (until puffed)




A side for Lunch...

2) Gluten-Free Bahamian Macaroni & Cheese - 8x8 pan


1 onion

1/2 green pepper

2 cups of whole milk

1/2 bag of gluten-free Brown Rice Penne Pasta (found at Publix) - can substitute for gluten-free penne if this brand can't be found

1lb Mexican or Colby Jack Cheese

1/2 cup Parmesan Cheese

Crushed red pepper

Salt

Pepper

1 tsp mustard


Cooking Directions

Place pasta in boiling salted water and cook until soft

Drain noodles and place back in pot

Turn stove on medium heat, add cheese, milk & other ingredients to pot (leave 2/3 cheese left for top of macaroni)

Stir until cheese is fully melted and creamy

Season with garlic powder, black pepper, salt, 1 tsp of mustard

Pour into 8x8 pan

Cover top of macaroni with 2/3 cup of cheese

Place foil over macaroni

Bake for 35-45 mins until corners of cheese are brown

Cool at room temperature for 30 mins


And to finish the baking, whip up a light appetizer paired with dinner...



3) Butternut Squash Pomegranate Appetizer


1 Squash

Salt

Black Pepper

Olive Oil

2 Pomegranate

Balsamic Dressing


Cooking Directions

Dice Squash in squares

Coat lightly with salt, pepper, and olive oil

Bake until soft and cool

Mix cooled squash, pomegranate, and balsamic dressing in bowl to taste

Refrigerate


These have become some favourite staples and we hope after baking them, you enjoy them too! Not to mention they are great for dinner parties and festive occasions!
